Ragga-Muffin Muffins

Another fantastic recipe from Ziggy’s sister, Cedella Marley!  Top with Fat-Free Rum Cream Cheese frosting (see below) for an over-the-top treat.



  • 1 cup breadfruit flour*
  • 1 cup flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup sugar
  • 1 egg
  • ¼ cup Coco’Mon™ Lemon Ginger Coconut Oil
  • ¾ cup fat-free milk
  • 2 ripe bananas
  • 1 tablespoon ginger
  • Pinch of nutmeg
  • 1 tablespoon maple syrup


1.Heat oven to 400°F and grease a muffin tin


2.Sift dry ingredients together and, in a separate bowl, mix wet ingredients together


3.Stir wet and dry together just till moisten


4.Fill muffin tins ⅔ full


5.Bake for 15-20 minutes (until edges pull away from tin)


Rum Cream Cheese Frosting


  • 1 (8 ounce) packages cream cheese, softened (fat free)
  • ¼ cup butter, softened
  • 1 cup sifted confectioners’ sugar
  • 1-2 teaspoons sugar root rum
  • ½ tsp fresh grated orange zest


1.In a medium bowl, cream together the cream cheese and butter until creamy.


2.Mix in the rum and orange zest, then gradually stir in the confectioners’ sugar.


3.Store in the refrigerator after use.


* Breadfruit flour is a gluten-free flour that is used in Caribbean cuisine.  It can be found in natural grocery stores and online.
