Cold Spring Rolls

 

This vitalizing treat is the perfect way to eat your veggies – and hempseeds. 

 

INGREDIENTS

  • Spring roll skins (rice paper wraps)

Filling:

  • Rice noodles, cooked al dente according to the directions on their package
  • Shredded carrots
  • Red cabbage, finely chopped
  • Fresh cilantro, trimmed and chopped
  • Fresh basil, minced
  • Cucumbers, sliced into thin 3-inch spears
  • Green onions, finely chopped

1.  Prepare all of your filling ingredients and set them aside.

 

2.  Soak a rice paper wrapper in warm water until soft and place on a clean countertop. In the middle of the wrapper, place your fillings (including a generous sprinkle of the hempseeds for flavor, nutrients, and crunch).

 

3.  Roll the bottom of the wrap up over the fillings. Next, fold each side in. Finally, roll the whole wrapper up from the bottom so that it’s enclosed. Serve with the sauce of your choice, or the Lemon Ginger Miso Sauce

Note: These rolls are best served immediately, but if you must store them, wrap in damp paper towels and refrigerate in an airtight container for 1-2 days.
